Packed with colorful veggies, hearty ramen noodles, and protein-rich sesame tofu bites, these can be enjoyed as a balanced dinner or easy lunch. Customizable meals like these offer kids the option to build their own bowl and add more or less of the ingredients they enjoy are a great way to help pickier eaters feel more comfortable trying new foods and participating in family meals. Ingredients

Bowls
  • Baked Sesame Tofu Bites for 4 (see recipe)
  • 1 tablespoon toasted sesame oil
  • 16 ounces zucchini noodles (pre-spiralized*, about 3 medium zucchini)
  • 10 ounces brown rice & millet ramen noodles
  • 2 cups carrots (pre-shredded, about 4 medium carrots)
Sauce
  • ½ cup tamari soy sauce*
  • 2 tablespoon toasted sesame oil
  • 3 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 2 tablespoons fresh ginger (grated)
  • 4 cloves garlic (minced)
Additional, Optional Toppings
  • ½ cup toasted sesame seeds (optional topping)
  • 1 avocado (pitted, peeled and cubed - optional topping)
  • ½ cup cilantro (chopped)
  • ½ cup scallions (trimmed and chopped - optional topping)

Instructions

  1. In a small bowl, whisk all sauce ingredients together and mix well until sugar has dissolved. Set aside.
  2. In a medium pot, bring water to a boil and cook the ramen according to the package’s instructions.
  3. While ramen is cooking, gently warm the tofu in a microwave or heated oven.
  4. In a large skillet over medium-high heat, heat 1 tablespoon sesame oil. Add the zucchini noodles and sauté until slightly tender, about 5 minutes. Add 3-4 tablespoons of prepared sauce and sauté for another minute. Remove from heat and set aside.
  5. Once the ramen noodles are cooked and drained, toss in a medium bowl with 3-4 tablespoons of the prepared sauce.
  6. Set out the shredded carrots, sesame seeds, zucchini noodles, ramen noodles, tofu bites, the remainder of the sauce, and any additional desired toppings so diners can assemble their nourish bowls as desired.

Notes

Store leftovers in separate airtight containers in the refrigerator for up to 2 days. This recipe does not freeze well.
