Ingredients
- 7 ounces graham crackers
- ¼ teaspoon salt
- ⅓ cup avocado oil
- 2 (8-ounce) packages cream cheese
- 1 cup part-skim ricotta cheese
- 1 cup non-fat plain Greek yogurt
- 1/2 cup confectioners’ sugar
- 1/4 cup honey
- Zest of 1 lemon
- 2 tablespoons lemon juice
- 16 ounces fresh strawberries (sliced)
Instructions
- Grind graham crackers and salt in a Vitamix* or food processor and pulse until finely ground. Keep the motor running very low and slowly pour in the oil. Stir until well combined.
- Lightly oil a 9x13-inch casserole dish with a few drops of avocado oil. Press the graham cracker mixture evenly throughout the bottom of the dish.
- Rinse the Vitamix or food processor, then add the cream cheese, ricotta cheese, yogurt, confectioners' sugar, honey, lemon zest and lemon juice. Puree until smooth.
- Spoon the mixture over the crust and spread evenly throughout the pan without disturbing the crust. Cover and refrigerate for at least 2 hours so that the mixture sets.
- Top with berries right before serving.
