I had the best time recently, chatting with Dr. Caudle and Dr. Ordon on CBS’s, “The Doctors,” about this breakfast idea! If your kiddos aren’t likely to eat a balanced breakfast in the morning, try serving it on a stick. This offers a novel way for kids to help “make” their own breakfast and feel involved, increasing the likelihood that they’ll eat what you serve. Just the idea of “food on a stick” is a fun reminder of being at a fair or amusement park, and this brain-building combination of foods in particular provides long-lasting energy that will fuel kids’ brains and bodies for hours rather than minutes, as well as a concentrated source of choline (from the egg) which is a key nutrient necessary for brain growth.

Ingredients

  • 1 egg
  • 4 cherry tomatoes
  • 2 Swiss cheese cubes
  • 1 slice buttered whole-grain toast
  • 1 bamboo skewer

Instructions

  1. In a small pot of water, add egg and bring water to a rolling boil. Reduce heat to low and simmer for 14 minutes. Remove pot from heat, pour off water and let the egg cool, then peel.
  2. Pierce the egg lengthwise with the skewer and slide to the middle. Working outwards from each end, add one cherry tomato on each side of the boiled egg, then add one cube of Swiss cheese on each end.
  3. Slice the buttered whole-grain toast into 4 strips and add two strips to each end of the skewer.
  4. Enjoy!
