These tasty Upgraded Easy Blender Pancakes contain only 6 ingredients and are packed with nutrients - a great way to provide a nutrient boost in a family-friendly, kid-approved favorite breakfast. Ingredients

  • 2 bananas, peeled
  • 2 cups whole oats
  • 6 scoops Else Plant-Powered Complete Nutrition Shake for Kids in Creamy Vanilla
  • 1 ½ cups water
  • 2 eggs (or for egg-free kiddos, substitute 2 tbsp chia seeds + 5 tablespoons water and let sit for 5 minutes)
  • 2 teaspoons butter of avocado oil (for cooking)
  • Maple syrup (optional garnish)

Instructions

  1. Combine all ingredients except butter or oil into the pitcher of a high-speed blender.
  2. Blend until smooth.
  3. In a large skillet over medium heat, melt the butter (or heat the oil of your choice).
  4. Reduce heat to low once butter is melted and spoon batter into the skillet so that it spreads into 3-inch wide pancakes. Cook for about 2 minutes per side or until lightly browned. Add more butter or oil between batches as needed.
  5. Serve hot, garnished with optional maple syrup.

Notes
