Quick, delectable, simple and slightly healthier than the standard version thanks to spelt flour and dark chocolate, these beauties deliver maximum flavor and just the right texture. Delish! Ingredients

  • 1/2 cup butter (melted)
  • 1/2 cup sugar
  • 1/2 cup dark brown sugar (packed)
  • 1/2 cup natural peanut butter (creamy or crunchy depending on preference)
  • 1 egg
  • 1 1/4 cups spelt flour*
  • 3/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 48 dark chocolate Hershey's Kisses

Instructions

  1. Preheat oven to 375 degrees.
  2. In a large mixing bowl*, whisk together the first five ingredients until smooth.
  3. Add in flour, baking soda, baking powder and salt and mix until thoroughly blended into a dough.
  4. Roll into approximately 48 small balls and evenly space onto a greased cookie pan.
  5. Bake for 8-10 minutes or until lightly browned. Remove from oven and immediately place a Hershey's Kiss in the center of each cookie, lightly pressing down.
  6. Cool thoroughly before storing, as chocolate will have melted and needs to reset.
