Cauliflower rice is a fun way to replace your regular side dish options, and adding a new flavor is another great way to spice it up even more. This recipe blends garlic, onion, and your favorite add ins to create an easy, quick side dish that everyone will love. Ingredients
- 1 large head cauliflower (trimmed and roughly chopped)
- 2 cloves garlic (minced)
- 1 small onion (minced)
- 2 tbsp olive or canola oil
- (Optional: salt, pepper, fresh lemon juice and chopped parsley to taste)
Instructions
- Chop cauliflower pieces in a food processor* until finely minced and similar to the texture of rice.
- In a large skillet, heat oil over medium high heat. When oil begins to shimmer, add onions and sauté for approximately 8 minutes or until softened and lightly browned. Add garlic. Sauté together for about 2 minutes or until garlic is fragrant.
- Add cauliflower, season with salt and pepper and sauté for another 2-3 minutes, or until cauliflower rice is tender.
- Remove from heat. Sprinkle with freshly squeezed lemon juice and garnish with chopped parsley. Serve hot.
