My girls were obsessed with these Coconut Ringsicle popsicles this past summer! I developed the recipe with my youngest and it became our go-to, refreshing and healthy summer treat. Offering pureed fruit in a popsicle is a great way to get little ones on board with new fruits and interested in food prep. It’s also hydrating and cooling - super helpful especially during the hotter months. Hope you enjoy!

Coconut Ringsicles
Ingredients
- 1 (14-ounce) can coconut milk (divided)
- 3 tablespoons shredded coconut (unsweetened, divided)
- 3 tablespoons sugar (divided)
- splash vanilla extract
- 1 lime
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 1 ripe banana
Instructions
- In a high speed blender*, blend 1/3 of can of coconut milk, 1 banana and 1 tablespoon sugar until smooth. Add 1 tablespoon shredded coconut, stir, pour into popsicle* molds and freeze.
- Rinse blender and add 1/3 of can of coconut milk, 1 tablespoon sugar, vanilla and blueberries until smooth. Add 1 tablespoon shredded coconut, stir, pour into popsicle molds and freeze.⠀
- Rinse blender and add 1/3 of can of coconut milk, 1 tablespoon sugar, raspberries and the juice of the lime until smooth. Add 1 tablespoon coconut, stir, pour into popsicle molds and freeze.⠀
- Serve cold!
