Pomegranate Splash Salad Dressing
I don’t know about you, but while I love olive oil + lemon on a salad, it sometime gets booooo—ring.
That being said, I don’t have time to make fancy, alternative dressing recipes either. But when it comes to salad as a meal, the right balance of healthy + delicious in a salad dressing is often the deciding factor in whether or not I leave the table feeling satisfied. Anyone else?
Making simple dressings at home is a great way to stay in control of all the ingredients used, since store-bought dressings can contain a lot of sodium, added sugars, dyes and preservatives.
So! Sharing one of my fave recent concoctions here as a solution – Pomegranate Splash! Love this healthy way to top a salad with tangy, summery-sweet flavors. YUM! ⠀

Pomegranate Splash Salad Dressing Recipe
Pomegranate Splash Salad Dressing

Ingredients
- 1 cup pomegranate juice
- ¼ cup avocado oil
- ¼ cup red wine vinegar
- 5 teaspoons vanilla agave syrup (or maple syrup)
- 1 teaspoon Dijon mustard
- ¼ teaspoon kosher salt
- ⅛ teaspoon pepper
Instructions
- Add all ingredients into a salad dressing cruet*, cover, and shake!
- Store in the refrigerator in an airtight container for up to 2 weeks.
