I don’t know about you, but while I love olive oil + lemon on a salad, it sometime gets booooo—ring.

That being said, I don’t have time to make fancy, alternative dressing recipes either. But when it comes to salad as a meal, the right balance of healthy + delicious in a salad dressing is often the deciding factor in whether or not I leave the table feeling satisfied. Anyone else?

Making simple dressings at home is a great way to stay in control of all the ingredients used, since store-bought dressings can contain a lot of sodium, added sugars, dyes and preservatives.

So! Sharing one of my fave recent concoctions here as a solution – Pomegranate Splash! Love this healthy way to top a salad with tangy, summery-sweet flavors. YUM!

Sharing one of my favorite recent concoctions here as a salad solution – Pomegranate Splash! Love this healthy way to top a salad with tangy, summery-sweet flavors.

Ingredients

  • 1 cup pomegranate juice
  • ¼ cup avocado oil
  • ¼ cup red wine vinegar
  • 5 teaspoons vanilla agave syrup (or maple syrup)
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon pepper

Instructions

  1. Add all ingredients into a salad dressing cruet*, cover, and shake!
  2. Store in the refrigerator in an airtight container for up to 2 weeks.
