  1. 1. Preheat the oven to 375°F.
  2. 2. In a 9x9-inch baking pan, combine the oats, lentils, flax seeds, baking powder, cinnamon, and salt. Scatter the berries and coconut evenly throughout.
  3. 3. In a separate bowl, whisk together the almond milk, sugar, egg, melted coconut oil and vanilla. Pour the wet mixture over the dry and gently fold to combine and evenly distribute.
  4. 4. Bake for 40 minutes, or until the top is lightly browned and the casserole is firmly set.
  5. 5. Serve warm, garnished with a ¼ cup of yogurt and a drizzle of maple syrup (optional).
