Summer cocktails are calling and mojitos are always on the top of my list! I can't think of a more refreshing summer combination than lime and mint. But mojitos are also pretty high in added sugar. If you are trying to limit your sugar intake, check out my recipe for a healthier mojito that uses watermelon as a base and was recently featured on the Food Network. It eliminates the added sugar and increases the micronutrient content without sacrificing flavor or freshness. Also tastes great sans rum if you want to serve it to the whole family!

Ingredients

  • 1 cup watermelon, cubed

  • 1 cup ice cubes

  • 1 tablespoon freshly squeezed lemon juice

  • 1 shot light rum (more or less to taste)

  • 5-6 large fresh mint leaves

  • 2-3 slices fresh lime (garnish)

  • 2-3 large mint leaves (garnish)

Instructions

  1. Add all ingredients (except garnishes) into a high-speed blender and blend until smooth. Pour, garnish and serve immediately.
