Check out this healthier twist on a party food favorite! This kid-friendly, family-friendly recipe is inspired by a similar dish from EatingWell’s Test Kitchen. When served with pita chips, raw veggie sticks or tortilla chips, it works well as a game-day appetizer, after-school snack or cocktail party hors d'oeuvre. Ingredients
- 9 ounces artichoke hearts rinsed (thawed if frozen)
- 1 cup parmesan cheese (grated)
- 1/4 cup mayonnaise
- 2 cloves garlic
- 1 large kale leaf (stem removed)
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- pinch cayenne pepper
Instructions
- Preheat oven to 400 degrees F.
- In a high-speed blender*, add all ingredients, reserving 1-2 tablespoons of Parmesan cheese. Blend until smooth.
- Pour into a shallow, 9-inch pie plate and sprinkle with remaining Parmesan cheese.
- Bake for 30 minutes or until dip is heated through and the top is lightly browned.
- Serve with multigrain pita or tortilla chips, carrot and celery sticks or any other dipping favorite!
