Sweet and Savory Sweet Potato Toast
So happy to share one of my absolute favorite meals these days! Sweet potatoes are remarkably flexible, blending with flavor combinations you might never expect to work! They are also rich in fiber, vitamins & minerals and antioxidants, which help protect your cells from free radical damage and chronic disease. I love that sweet potato toast offers a simple way to create a balanced meal (protein + carb + fiber + fat) quickly and easily. One of my favorite mom hacks is to bake the sliced sweet potato in advance and freeze. Any time you feel like making some sweet potato toast, all you have to do is pop it in the toaster oven and add toppings.

Sweet and Savory Sweet Potato Toast
Ingredients
- 2 medium sweet potatoes, sliced into 1/4-inch slabs (skin on)
- Ricotta cheese with fresh figs & honey
- Almond butter with sliced banana & ground flax seeds
- Cream cheese with sliced strawberries, pomegranate seeds
- Brie cheese with strawberry jam & white chia seeds
- Avocado with chives, freshly squeezed lemon juice & salt
- Fried egg, sliced radish & chopped parsley
- Olive-flavored hummus & sliced kalamata olives
- Tzatziki sauce, sliced cucumber & chopped dill
Instructions
- Preheat oven to 400°F.
- Lightly oil a baking sheet* and arrange sweet potato toasts in a single layer.
- Bake for about 35-40 minutes or until tender, then cool and toast the slabs in a toaster oven until lightly browned, and slightly crunchy on the outside.
- (Alternatively, you can cool the slabs before toasting and freeze in a freezer-safe container* until you're ready to toast them later).
- Top with your choice of interesting combinations (ideas below)
