Easy Shishito Peppers
SO easy, SO satisfying, and perfect as a healthy appetizer, snack or side. Shishito peppers are mostly mild, but about 1 in 10 is spicy! This makes them a fun party snack or finger food, but be sure to warn your kiddos or guests before you serve them. These little green beauties are also great at helping to support digestive health, brimming with antioxidants and high in vitamin C (and therefore great at helping our bodies absorb more iron when eaten along with an iron-rich food).

Easy Shishito Peppers
Easy Shishito Peppers

Ingredients
- 1 tablespoon extra-virgin olive oil
- 8 ounces Shishito peppers
- ¾ teaspoon Kosher or Maldon salt
- ¼ teaspoon freshly ground black pepper
- Juice from ¼ of a lemon (more or less to taste)
Instructions
- Heat olive oil in a large cast iron skillet* over medium-high heat.
- Add peppers and sauté until blistered, soft, and lightly charred in places, about 8-10 minutes. Season with salt, freshly ground pepper, and freshly squeezed lemon juice. Serve hot.
Notes
- When you cook acidic foods like peppers in cast iron, some of the iron from the pan leaches into the food and helps increase your iron intake.
- Store leftovers in an airtight container in the refrigerator and enjoy within 5 days.
