Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 8 ounces Shishito peppers
  • ¾ teaspoon Kosher or Maldon salt
  • ¼ teaspoon freshly ground black pepper
  • Juice from ¼ of a lemon (more or less to taste)

Instructions

  1. Heat olive oil in a large cast iron skillet* over medium-high heat.
  2. Add peppers and sauté until blistered, soft, and lightly charred in places, about 8-10 minutes. Season with salt, freshly ground pepper, and freshly squeezed lemon juice. Serve hot.

Notes

  • When you cook acidic foods like peppers in cast iron, some of the iron from the pan leaches into the food and helps increase your iron intake.
  • Store leftovers in an airtight container in the refrigerator and enjoy within 5 days.
