Easy Shishito Peppers
SO easy, SO satisfying, and perfect as a healthy appetizer, snack or side. Shishito peppers are mostly mild, but about 1 in 10 is spicy! This makes them a fun party snack or finger food, but be sure to warn your kiddos or guests before you serve them. These little green beauties are also great at helping to support digestive health, brimming with antioxidants and high in vitamin C (and therefore great at helping our bodies absorb more iron when eaten along with an iron-rich food).

Ingredients
- 8 ounces Shishito peppers
- 1 tablespoon olive oil
- Juice from 1/4 of a lemon (more or less to taste)
- Kosher or Maldon salt (to taste)
- Black pepper (freshly ground, to taste)
Instructions
- Heat a tablespoon of olive oil in a large cast iron skillet* over medium-high heat. (Tip - when you cook acidic foods like peppers in cast iron, some of the iron from the pan leaches into the food and helps increase your iron intake.)
- Add peppers and sauté for about 8-10 minutes or until blistered, soft, and lightly charred in places.
- Season with coarse salt, freshly ground pepper and freshly squeezed lemon juice and serve immediately.
