These kid-approved Dijon Deviled Eggs offer a tasty way to get your daily dose of choline.
Ingredients
- 12 eggs
- 1/4 cup mayonnaise
- 1/4 cup plain, full-fat yogurt
- 2 tablespoons Dijon mustard
- 1 tsp cocktail sauce
- 1/2 teaspoon Kosher salt
- 1 scallion (trimmed and finely chopped)
- Ground black pepper (to taste)
- Smoked paprika (optional; garnish)
Instructions
- Place eggs in a large pot, cover with cold water and bring just to a boil over medium-high heat. As soon as water is boiling, reduce heat to low and simmer for 14 minutes.
- Transfer eggs to a bowl of ice water and let sit for at least 10 minutes or until eggs are cooled completely.
- Peel eggs and slice in half length-wise. Pop yolks out of the whites with a small spoon into a medium bowl and set aside, placing the whites onto a serving platter.
- Add all remaining ingredients into the bowl with the yolks (except for paprika garnish) and mix, mashing the yolks with a fork and stirring mixture until well combined and uniform throughout.
- Spoon the yolk mixture evenly into the egg white halves with a small spoon or piping bag. Garnish with a sprinkle of paprika across the top and serve immediately, or store for up to 2 days in the refrigerator in an airtight container.
