Ingredients
Spice Paste
- 1 ½ teaspoons ground cumin
- 1 ½ teaspoons ground coriander
- ½ teaspoon smoked paprika
- ¼ teaspoon cracked red pepper flakes
- ¼ teaspoon kosher salt
- ¼ teaspoon garlic powder
- 1 tablespoon lime juice, freshly squeezed
- 2 tablespoons olive oil
Crema
- ¾ cup scallions, thinly sliced
- ¾ cup cilantro, minced
- ¼ cup mayonnaise*
- ¼ cup creme fraiche
- ½ cup plain Greek yogurt
- 3 teaspoons lime juice, freshly squeezed
- ½ teaspoon kosher salt
- 2 cloves garlic, minced
Tacos
- 1 large head cauliflower, trimmed and cut into small, bite-sized pieces
- 1 (14.4 ounce) can black beans, rinsed and drained
- 10 (6-inch) corn tortillas
Garnish
- 2 cups purple cabbage,shredded
- Lime wedges
Instructions
- Preheat oven to 450° F. Line a large, rimmed sheet pan with aluminum foil.
- Combine all spice paste ingredients in a large bowl and mix well. Add cauliflower to the bowl and stir until pieces are well coated. Transfer cauliflower onto baking sheet and spread evenly in a single layer.Roast for 18-20 minutes, turning once halfway through cooking. Remove from oven when cauliflower is tender and lightly browned.
- While cauliflower is roasting, prepare the crema: combine all crema ingredients in a small bowl and stir until mixed evenly.
- Warm the beans in a small pot over medium heat on the stovetop, or in a microwave-safe dish in the microwave.
- In a separate dry, medium skillet, gently w arm the tortillas on both sides over medium heat.
- Assemble tacos: add cauliflower, beans, and crema to warmed tortillas. Garnish with cabbage and lime wedges and serve warm.
Notes
- Store crema in an airtight container in the refrigerator for up to 7 days. Leftover cauliflower and beans can be stored for up to 5 days.
- Please be aware that this recipe contains milk.
