Ingredients

Spice Paste
  • 1 ½ teaspoons ground cumin
  • 1 ½ teaspoons ground coriander
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cracked red pepper flakes
  • ¼ teaspoon kosher salt
  • ¼ teaspoon garlic powder
  • 1 tablespoon lime juice, freshly squeezed
  • 2 tablespoons olive oil
Crema
  • ¾ cup scallions, thinly sliced
  • ¾ cup cilantro, minced
  • ¼ cup mayonnaise*
  • ¼ cup creme fraiche
  • ½ cup plain Greek yogurt
  • 3 teaspoons lime juice, freshly squeezed
  • ½ teaspoon kosher salt
  • 2 cloves garlic, minced
Tacos
  • 1 large head cauliflower, trimmed and cut into small, bite-sized pieces
  • 1 (14.4 ounce) can black beans, rinsed and drained
  • 10 (6-inch) corn tortillas
Garnish
  • 2 cups purple cabbage,shredded
  • Lime wedges

Instructions

  1. Preheat oven to 450° F. Line a large, rimmed sheet pan with aluminum foil.
  2. Combine all spice paste ingredients in a large bowl and mix well. Add cauliflower to the bowl and stir until pieces are well coated. Transfer cauliflower onto baking sheet and spread evenly in a single layer.Roast for 18-20 minutes, turning once halfway through cooking. Remove from oven when cauliflower is tender and lightly browned.
  3. While cauliflower is roasting, prepare the crema: combine all crema ingredients in a small bowl and stir until mixed evenly.
  4. Warm the beans in a small pot over medium heat on the stovetop, or in a microwave-safe dish in the microwave.
  5. In a separate dry, medium skillet, gently w arm the tortillas on both sides over medium heat.
  6. Assemble tacos: add cauliflower, beans, and crema to warmed tortillas. Garnish with cabbage and lime wedges and serve warm.

Notes

  1. Store crema in an airtight container in the refrigerator for up to 7 days. Leftover cauliflower and beans can be stored for up to 5 days.
  2. Please be aware that this recipe contains milk.
