Ingredients

Spice Paste
  • 1 ½ teaspoons ground cumin
  • 1 ½ teaspoons ground coriander
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cracked red pepper flakes
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder
  • 1 tablespoon lime juice (freshly squeezed)
  • 2 tablespoons olive oil
Crema
  • ¾ cup scallions (thinly sliced)
  • ¾ cup cilantro (minced)
  • ¼ cup mayonnaise*
  • ¼ cup creme fraiche
  • ½ cup plain Greek yogurt
  • 3 teaspoons lime juice (freshly squeezed)
  • ½ teaspoon salt
  • 2 cloves garlic (minced)
Tacos
  • 10 6-inch corn tortillas
  • 1 large head cauliflower (trimmed and cut into small, bite-sized pieces)
  • 1 (14.4 ounce) can black beans (rinsed and drained)
Garnish
  • 2 cups purple cabbage (shredded)
  • Lime wedges

Instructions

  1. Preheat oven to 450 degrees F.
  2. Line a large sheet pan with aluminum foil.
  3. Combine all spice paste ingredients in a large bowl and mix well.
  4. Add cauliflower to the bowl and stir well until pieces are coated.
  5. Transfer and spread evenly onto baking sheet.
  6. Roast for 18-20 minutes, turning once halfway through cooking. Remove from oven when cauliflower is tender and lightly browned.
  7. While cauliflower is roasting, prepare the crema: combine all ingredients in a small bowl and stir until mixed evenly.
  8. Warm the beans on the stovetop or in the microwave.
  9. Warm the tortillas.
  10. Serve tacos with cauliflower, beans and crema, garnished with cabbage and lime wedges.
