A new twist on pancakes! These Banana Protein Pancakes are packed with protein and a healthy, tasty breakfast option for the whole family, kids included. Make a double batch and freeze the extra for busy weekday mornings or on-the-go snacks. Ingredients
- 6 eggs
- 2 1/4 cups whole oats
- 1/4 cup almond meal
- 2 bananas
- 1/2 cup milk (cow’s or plant-based alternative)
- 1/4 cup ricotta cheese
- Pinch of salt (optional)
- 2 tablespoons butter
- ground cinnamon optional garnish (to taste)
- maple syrup optional (to taste)
Instructions
- Place all ingredients except cinnamon and butter in a high-speed blender* and blend until smooth.
- Heat griddle to medium-high heat, melt the butter and pour pancake batter into 3-inch wide pancakes.
- When batter starts to bubble and edges are slightly browned, flip once and cook other side until lightly browned.
- Serve hot with optional maple syrup.
