Ingredients

  • 1 cup pitted cherries, frozen or fresh
  • 1 medium ripe banana
  • ½ cup almond flour
  • ¼ cup melted butter (can substitute for ¼ cup coconut oil for vegan)
  • ½ teaspoon pure vanilla extract
  • ½ cup old-fashioned or quick cook oats

Instructions

  1. Preheat oven to 350° F and line a cookie sheet with parchment paper.
  2. In a food processor or blender, add cherries, banana, almond flour, melted butter, and vanilla extract and blend until smooth and uniform throughout, using a tamper and rubber spatula to scrape the dough down the sides of the pitcher as needed.
  3. Add the oats and mix by hand until well-combined.
  4. Using a small ice cream scoop, spoon evenly into 12 balls and place each on the prepared cookie sheet.
  5. Bake for a total of 20 minutes; 15 minutes into baking, use a non-stick spatula to press each cookie flat, then bake for the remaining 5 minutes.
  6. Remove from heat and cool for at least 10 minutes before serving.
  7. Optional: once cooled, use a heart-shaped cookie cutter to cut each cookie into a heart.

Notes

Store in an airtight container for up to 3 days unrefrigerated and for up to 1 week in the refrigerator.
