BLW Valentine Cookies Recipe
BLW Valentine Cookies

Ingredients
- 1 cup pitted cherries, frozen or fresh
- 1 medium ripe banana
- ½ cup almond flour
- ¼ cup melted butter (can substitute for ¼ cup coconut oil for vegan)
- ½ teaspoon pure vanilla extract
- ½ cup old-fashioned or quick cook oats
Instructions
- Preheat oven to 350° F and line a cookie sheet with parchment paper.
- In a food processor or blender, add cherries, banana, almond flour, melted butter, and vanilla extract and blend until smooth and uniform throughout, using a tamper and rubber spatula to scrape the dough down the sides of the pitcher as needed.
- Add the oats and mix by hand until well-combined.
- Using a small ice cream scoop, spoon evenly into 12 balls and place each on the prepared cookie sheet.
- Bake for a total of 20 minutes; 15 minutes into baking, use a non-stick spatula to press each cookie flat, then bake for the remaining 5 minutes.
- Remove from heat and cool for at least 10 minutes before serving.
- Optional: once cooled, use a heart-shaped cookie cutter to cut each cookie into a heart.
Notes
Store in an airtight container for up to 3 days unrefrigerated and for up to 1 week in the refrigerator.
