Instructions
  1. Puree all ingredients together (except oil) in a high-speed blender until mixture is smooth and well combined.
  2. Heat oil in a large skillet or grill pan over medium heat, Pour spoonfuls of batter into the pan so that each pancake is about 3 inches in diameter. Flip once the edges of each pancake begin to harden and batter begins to bubble.
  3. When both outer sides of each pancake are slightly browned and the insides are cooked through, remove from heat and serve hot with maple syrup.
