No-Bake Chocolate Chip Oat Cookies

No-bake chocolate chip oat cookies

Everyone loves cookies,

…but we don’t always have the time to prep, bake, and wait for them to be ready. These no-bake options are ready in 10 minutes or less, and bursting with health-promoting nutrients like fiber and plant-based protein, which help provide kids and adults alike with a variety of the nutrients we need to support overall health and wellness.

I love packing these for my kids as a pre-game or pre-performance snack when they will be active for longer periods of time and need a filling, satisfying, long-lasting energy source. They are always a hit with the kid-set. Enjoy!

Ingredients

  • 1 cup whole oats
  • 1 1/4 cups peanut butter
  • 1/2 cup mini dairy-free chocolate chips
  • 1/3 cup coconut unsweetened (shredded)
  • 1/3 cup flax seeds ground
  • 1/4 cup hemp hearts
  • 1/4 cup honey
  • Pinch of salt

Instructions

  1. Add all ingredients into a large bowl and mix with a wooden spoon until well combined.
  2. Divide dough into 16 equal pieces and roll each into a ball. (It helps to squeeze the dough for each ball tightly together so that it holds its shape.)
  3. Flatten each ball into a cookie shape and serve.
  4. Keep extra in the refrigerator for up to a week.
