  1. In a high-speed blender, combine all ingredients except for butter and syrup. Blend until smooth and batter-like in consistency.
  2. Heat butter of medium heat on a non-stick skillet. Pour batter into 3-inch circles and cook until sides lift slightly and the batter begins to bubble. Flip and cook until golden.
  3. Serve hot garnished with maple syrup.
