  1. Chop cauliflower pieces in a food processor until finely minced and similar to the texture of rice.
  2. In a large skillet, heat oil over medium high heat. When oil begins to shimmer, add onions and sauté for approximately 8 minutes or until softened and lightly browned. Add garlic. Sauté together for about 2 minutes or until garlic is fragrant.
  3. Add cauliflower, season with salt and pepper and sauté for another 2-3 minutes, or until cauliflower rice is tender.
  4. Remove from heat. Sprinkle with freshly squeezed lemon juice and garnish with chopped parsley. Serve hot.
