Instructions
  1. Preheat oven to 375 degrees F.
  2. Lightly oil a 13-inch x 9-inch x 2-inch baking dish.
  3. In a medium mixing bowl or large re-sealable plastic bag, combine oats and all seasonings and mix well.
  4. In a separate medium mixing bowl, add soy milk and maple syrup and whisk until well blended.
  5. Dip the chicken first in soy milk/maple syrup mixture, then coat thoroughly with the oat/spice combination and place in a single layer in the baking dish.
  6. Drizzle the olive oil evenly over the tops of the cutlets.
  7. Bake at 375 degrees F, uncovered for about 20 minutes or until lightly browned and crispy and juices run clear. Serve hot or cold.
