Coconut Ringsicles
Check out my new fave popsicle molds - ring pops! So much fun and a great way to get littles on board with new fruits and interested in food prep.

I developed this recipe with my youngest. Perfect for healthy summer treats!

  1. In a high speed blender, blend 1/3 of can of coconut milk, 1 banana and 1 tablespoon sugar until smooth. Add 1 tablespoon shredded coconut, stir, pour into popsicle molds and freeze.
  2. Rinse blender and add 1/3 of can of coconut milk, 1 tablespoon sugar, vanilla and blueberries until smooth. Add 1 tablespoon shredded coconut, stir, pour into popsicle molds and freeze.⠀
  3. Rinse blender and add 1/3 of can of coconut milk, 1 tablespoon sugar, raspberries and the juice of the lime until smooth. Add 1 tablespoon coconut, stir, pour into popsicle molds and freeze.⠀
  4. Serve cold!
