  1. Place all ingredients except bananas, cinnamon and butter in a high-speed blender and blend until smooth. Heat griddle to medium high heat, melt the butter and pour pancake batter into 3-inch wide pancakes. Drop banana slices into each pancake. When batter starts to bubble and edges are slightly browned, flip once and cook other side until lightly browned. Serve hot with optional maple syrup.
